The Pina Colada Cake is inspired by the popular tropical cocktail, Pina Colada, which originated in Puerto Rico.

Preheat the oven to 350°F (175°C).

In a large bowl, combine the cake mix, pineapple juice, vegetable oil, eggs, coconut milk, and rum extract. Mix well until smooth.

Stir in the crushed pineapple.

Pour the batter into a greased 9x13-inch baking dish.

Bake for 30 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool for 10 minutes.

In a separate bowl, whip the cream until stiff peaks form.

Spread the whipped cream over the cooled cake.

Sprinkle shredded coconut on top.
