Ingredients
  • 1 can Jackfruit
  • 1 teaspoon Old Bay seasoning
  • 1 cup Red bell pepper, finely chopped
  • 1 cup Green onions, finely chopped
  • 2 tablespoon Vegan mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Lemon juice
  • 1 cup Panko breadcrumbs
  • 2 tablespoon Fresh parsley, chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Vegetable oil
Instructions
  1. Drain and rinse the jackfruit, then shred it using a fork.
  2. In a mixing bowl, combine the shredded jackfruit, Old Bay seasoning, red bell pepper, green onions, vegan mayonnaise, Dijon mustard, lemon juice, panko breadcrumbs, fresh parsley, salt, and black pepper. Mix well.
  3. Form the mixture into patties and place them on a baking sheet lined with parchment paper.
  4. Heat vegetable oil in a skillet over medium heat. Fry the patties for 3-4 minutes on each side until golden brown.
  5. Serve the phoney crab cakes hot with your favorite dipping sauce.
