  1. Preheat the oven to 400°F (200°C). Grease a muffin tin.
  2. In a large bowl, combine the cornmeal, flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together the egg, milk, and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup halfway.
  6. Place a slice of pepperoni on top of each muffin cup, pressing it gently into the batter.
  7. Sprinkle shredded cheddar cheese over the pepperoni.
