  1. Preheat the oven to 350°F (175°C). Grease and line a 10x15-inch jelly roll pan with parchment paper.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. In a large bowl, beat the eggs and granulated sugar until thick and pale yellow. Stir in the vanilla extract and peppermint extract.
  4. Gradually add the dry ingredients to the egg mixture, folding gently until just combined.
  5. Divide the batter in half. Stir the red food coloring into one half.
  6. Pour the batters into the prepared pan, alternating spoonfuls of each color. Use a knife to swirl the colors together.
  7. Bake for 10-12 minutes, or until the cake springs back when lightly touched.
  8. While the cake is still warm, dust a clean kitchen towel with powdered sugar. Invert the cake onto the towel and carefully remove the parchment paper.
  9. Starting at one short end, roll the cake and towel together. Place the rolled cake on a wire rack to cool completely.
  10. Once the cake has cooled, carefully unroll it and spread whipped cream evenly over the surface. Sprinkle crushed peppermint candies on top.
  11. Roll the cake back up, without the towel, and transfer to a serving platter.
