  • 2 piece Pears
  • 4 tablespoon Butter
  • 1 cup Brown sugar
  • 1 teaspoon Ground ginger
  • 1.5 cup All-purpose flour
  • 1.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.75 cup Granulated sugar
  • 0.5 cup Vegetable oil
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Milk
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Peel and core the pears, then slice them into thin slices.
  3. In a small saucepan, melt 2 tablespoons of butter over medium heat. Add the brown sugar and ground ginger, stirring until the sugar has dissolved. Remove from heat.
  4. Pour the brown sugar mixture into the prepared cake pan, spreading it evenly. Arrange the pear slices on top of the sugar mixture.
  5. In a medium bowl, whisk together the flour, baking powder, salt, ground cinnamon, and ground nutmeg.
  6. In a separate large bowl, beat the granulated sugar, vegetable oil, eggs, and vanilla extract until well combined. Gradually add the dry ingredients and milk, alternating between the two, beginning and ending with the dry ingredients.
  7. Pour the batter over the pears in the cake pan, spreading it evenly.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, invert the cake onto a serving plate and gently remove the pan.
  10. Serve the pear and ginger upside-down cake warm or at room temperature.
