Whoopie pies are believed to have originated in the Amish communities of Pennsylvania, and they were traditionally made with leftover cake batter.

Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

In a large bowl, beat the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, and mix well.

Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined.

Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each dough mound slightly with the back of a spoon.

Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.

In a medium bowl, whisk together the confectioners' sugar, milk, vanilla extract, marshmallow creme, butter, and peanut butter until smooth and creamy.

Spread a generous amount of filling on the flat side of half of the cookies. Top with the remaining cookies, flat side down, to create sandwiches.
