  • 2 cup Peaches
  • 1 cup Sugar
  • 2 tablespoon Cornstarch
  • 1 teaspoon Vanilla extract
  • 1.5 cup Heavy cream
  • 0.5 cup Milk
  • 3 unit Egg yolks
  • 2 tablespoon Butter
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a 9-inch pie dish.
  3. In a saucepan, combine the peaches, sugar, cornstarch, and vanilla extract. Cook over medium heat until the mixture thickens, stirring constantly.
  4. Pour the peach filling into the pie crust.
  5. In a separate saucepan, heat the heavy cream and milk over medium heat until hot but not boiling.
  6. In a bowl, whisk the egg yolks. Slowly pour the hot cream mixture into the egg yolks, whisking constantly.
  7. Pour the custard mixture over the peach filling in the pie crust.
  8. Bake for 25-30 minutes, or until the pie is set and the crust is golden brown.
  9. Remove from the oven and let the pie cool for at least 2 hours.
