Preheat the oven to 375°F (190°C).

Roll out the pie crust and fit it into a 9x13-inch baking dish.

In a large bowl, combine sliced peaches, granulated sugar, cornstarch, scraped vanilla bean seeds, and ground cardamom. Mix well.

Pour the peach filling into the prepared pie crust.

Roll out the remaining pie crust and cut into strips.

Create a lattice pattern on top of the peach filling with the pie crust strips.

In a small bowl, whisk together the egg and milk to make an egg wash.

Brush the lattice crust with the egg wash and sprinkle with turbinado sugar.

Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
