  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the butter into small cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the heavy cream and vanilla extract.
  5. Pour the cream mixture into the dry ingredients and stir until just combined.
  6. Gently fold in the diced peaches.
  7. Turn the dough out onto a lightly floured surface and knead it a few times until it comes together.
