  1. Preheat the oven to 375°F (190°C).
  2. Roll out one pie crust and place it in a 9-inch pie dish.
  3. In a large bowl, mix together sliced peaches, sugar, flour, lemon juice, cinnamon, and vanilla extract.
  4. Pour the peach mixture into the pie crust.
  5. Dot the top of the filling with small pieces of butter.
  6. Roll out the second pie crust and place it on top of the filling.
  7. Trim and crimp the edges of the pie crust.
  8. Cut a few slits in the top crust to allow steam to escape.
  9. Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Remove from the oven and let the pie cool for at least 1 hour before serving.
