Peach Melba Muffins were inspired by the classic dessert Peach Melba, which was created by the French chef Auguste Escoffier in honor of the Australian opera singer Nellie Melba.

Preheat the oven to 375°F (190°C). In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, mix together the milk, melted butter, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced peaches. Line a muffin tin with paper liners and fill each cup about 2/3 full with the batter. Spoon a teaspoon of raspberry jam onto the top of each muffin and swirl it into the batter with a toothpick. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely. Enjoy!
