Ingredients
  • 8 ounce Pie crust
  • 1 cup Strawberries
  • 1 cup Blueberries
  • 2 tablespoon Sugar
  • 1 tablespoon Cornstarch
  • 1 tablespoon Lemon juice
  • 1 large Egg
  • 1 tablespoon Water
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and cut out circles to fit the mini pie tins.
  3. Press the pie crust circles into the tins and set aside.
  4. In a bowl, combine the strawberries, blueberries, sugar, cornstarch, and lemon juice.
  5. Spoon the berry mixture into the pie crusts.
  6. In a small bowl, whisk together the egg and water to make an egg wash.
  7. Brush the edges of the pie crusts with the egg wash.
  8. Bake the mini pies in the preheated oven for 20-25 minutes, or until the crust is golden brown.
  9. Allow the pies to cool before serving.
