  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased 9-inch springform pan.
  3. In a separate bowl, beat the cottage cheese, cream cheese, and granulated sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the lemon juice, vanilla extract, matzo meal, sour cream, and salt.
  4. Pour the mixture over the crust in the springform pan.
  5. Bake for 40 minutes, or until the center is set.
  6. Remove from the oven and let it cool in the pan for 10 minutes. Then, remove the sides of the springform pan and let the cake cool completely.
  7. Refrigerate for at least 2 hours before serving.
  8. Serve chilled and enjoy!
