Parmesan Polenta Cakes with Mushroom & Sausage Hash
Polenta is a traditional Italian dish made from cornmeal and is a staple in Northern Italian cuisine.

In a saucepan, bring 4 cups of water to a boil. Slowly pour in the polenta while whisking continuously. Reduce heat to low and cook for 15 minutes, stirring occasionally.

Stir in the Parmesan cheese until melted. Remove from heat and let cool for 5 minutes.

Meanwhile, heat olive oil in a skillet over medium heat. Add the sausage and cook until browned. Remove from skillet and set aside.

In the same skillet, add the onion and garlic. Cook until softened. Add the mushrooms and cook until they release their moisture.

Slice the cooked sausage and add it back to the skillet with the mushrooms. Season with salt and black pepper.

Preheat the oven to 400°F (200°C). Grease a baking sheet.

Scoop the polenta onto the baking sheet and shape into round cakes. Place on the greased baking sheet.

Bake for 15-20 minutes, or until the edges are golden brown.

Serve the Parmesan polenta cakes topped with the mushroom and sausage hash. Garnish with fresh parsley.
