In a saucepan, bring the vegetable broth to a boil. Gradually whisk in the polenta and reduce heat to low. Cook for 5 minutes, stirring constantly.

Remove from heat and stir in the Parmesan cheese, butter, salt, and black pepper until well combined.

Grease a baking dish with olive oil and pour the polenta mixture into it. Smooth the top with a spatula.

Let the polenta cool for 10 minutes, then refrigerate for 20 minutes to set.
