Preheat the oven to 350°F (175°C).

Cook the sweet potatoes until tender, then mash them.

In a large bowl, combine the mashed sweet potatoes, eggs, vegetable oil, sugar, cinnamon, nutmeg, and vanilla extract. Mix well.

Gradually add the pancake mix and milk, alternating between the two, and mixing until just combined.

Pour the batter into a greased cake pan and smooth the top.

Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes.
