Ingredients
  • 2 cup Almond flour
  • 1/4 cup Coconut flour
  • 4 tablespoon Coconut oil
  • 3 tablespoon Maple syrup
  • 4 large Persimmons
  • 1 tablespoon Lemon juice
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/4 teaspoon Salt
  • 1/2 cup Coconut milk
  • 2 large Eggs
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine almond flour, coconut flour, coconut oil, and maple syrup. Mix well until a dough-like consistency is formed.
  3. Press the dough into a pie dish to form the crust. Bake for 10 minutes.
  4. In a blender, blend persimmons, lemon juice, cinnamon, nutmeg, salt, coconut milk, and eggs until smooth.
  5. Pour the persimmon mixture into the baked crust.
  6. Bake for 30-35 minutes, or until the filling is set.
  7. Allow the pie to cool for 30 minutes before serving.
  8. Serve and enjoy!
