Ingredients
  • 1 cup Pecans
  • 1 stick Butter
  • 1 cup Brown sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 1 package Pie crust
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar until smooth. Remove from heat and let cool slightly.
  3. In a large bowl, beat the eggs. Stir in the melted butter mixture, vanilla extract, and salt.
  4. Roll out the pie crust and cut out small circles using a cookie cutter. Press each circle into a mini muffin tin.
  5. Fill each pie crust with the pecan mixture.
  6. Bake for 12-15 minutes, or until the pies are set and golden brown.
  7. Allow the pies to cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.
  8. Serve and enjoy!
