Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

In a large bowl, combine the grated carrots, flour, sugar, oil, eggs, vanilla extract, baking powder, baking soda, cinnamon, salt, and chopped walnuts. Mix well.

Pour the batter into the prepared baking pan and smooth the top.

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

In a separate bowl, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.

Spread the cream cheese frosting evenly over the cooled cake.
