Ingredients
  • 1 cup Oats
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter, softened
  • 1/2 cup Brown sugar
  • 1/4 cup Granulated sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1/4 cup Milk
  • 1/2 cup Cream cheese, softened
  • 1/2 cup Powdered sugar
  • 1/2 cup Heavy cream
  • 1/2 teaspoon Cinnamon
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine oats, flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredient mixture to the wet ingredients, alternating with milk.
  6. Drop rounded tablespoons of dough onto a greased baking sheet.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Remove from the oven and let cool completely.
  9. In a separate bowl, beat together cream cheese, powdered sugar, heavy cream, and cinnamon until smooth.
  10. Spread the cream cheese filling on the flat side of one cookie and top with another cookie to make a sandwich.
  11. Repeat with the remaining cookies.
  12. Allow the whoopie pies to rest for 30 minutes before serving. Enjoy!
