  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the butter mixture and mix well.
  6. Stir in the rolled oats.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets.
  8. Bake for 10-12 minutes or until golden brown.
  9. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  10. Once the cookies are completely cooled, spread cream filling on the flat sides of half the cookies and top with the remaining cookies to make sandwiches.
  11. Let the oatmeal cream pies rest for about 30 minutes before serving.
