Norwegian Strawberries and Cream Cake Blotkake

Preheat the oven to 180°C.

Prepare the sponge cake according to the recipe.

Once the sponge cake is cooled, cut it horizontally into two equal layers.

Place the bottom layer on a serving plate.

Rinse and slice the strawberries.

Whip the cream with sugar and vanilla sugar until stiff peaks form.

Spread half of the whipped cream on the bottom layer of the sponge cake.

Arrange half of the sliced strawberries on top of the cream.

Place the second layer of sponge cake on top.

Repeat steps 7-9 with the remaining whipped cream and strawberries.

Dissolve gelatin in water according to package instructions.

Pour the gelatin mixture over the top layer of the cake.
