  2. In a large bowl, mix together the flour, sugar, ground almonds, and salt.
  3. Cut the butter into small pieces and add it to the flour mixture. Use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
  4. Add the egg yolks and vanilla extract to the mixture and mix until a dough forms.
  5. Press two-thirds of the dough into the bottom of a greased 9-inch (23 cm) tart pan.
  6. Spread the raspberry jam over the dough in the pan.
  7. Roll out the remaining dough and cut it into strips. Arrange the strips in a lattice pattern over the jam.
  8. Beat the egg whites until stiff peaks form. Spread the beaten egg whites over the lattice crust.
  9. Bake the cake in the preheated oven for 35-40 minutes, or until golden brown.
  10. Allow the cake to cool for 30 minutes before removing it from the pan.
  11. Dust the cake with powdered sugar before serving.
