Press two-thirds of the dough into the bottom and up the sides of a 9-inch (23 cm) pie dish.

In another bowl, toss the apple slices with cinnamon, lemon juice, brown sugar, and vanilla extract.

Arrange the apple slices evenly over the dough in the pie dish.

Roll out the remaining dough and cut it into strips.
