Ingredients
  • 1.5 cup Graham cracker crumbs
  • 0.5 cup Unsalted butter
  • 2 package Cream cheese
  • 0.75 cup Granulated sugar
  • 0.25 cup Lemon juice
  • 1 teaspoon Lemon zest
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy cream
  • 0.25 cup Powdered sugar
Instructions
  1. In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  2. In a separate bowl, beat cream cheese and granulated sugar until smooth. Add lemon juice, lemon zest, and vanilla extract. Mix well.
  3. In another bowl, whip the heavy cream and powdered sugar until stiff peaks form. Fold the whipped cream into the cream cheese mixture.
  4. Pour the mixture over the prepared crust in the springform pan. Smooth the top with a spatula.
  5. Refrigerate for at least 4 hours or until set.
  6. Once set, remove the sides of the springform pan and serve chilled.
