Ingredients
  • 1 cup Nettle Leaves
  • 2 teaspoon Lemon Zest
  • 3 tablespoon Lemon Juice
  • 0.5 cup Unsalted Butter
  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 1.5 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 0.5 teaspoon Salt
  • 0.5 cup Milk
  • 1 cup Powdered Sugar
  • 1 cup Unsalted Butter (for buttercream)
  • 1 teaspoon Vanilla Extract
  • 2 drop Yellow Food Coloring (optional)
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a small saucepan, blanch the nettle leaves for 1 minute. Drain and finely chop the blanched nettle leaves.
  3. In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Stir in the chopped nettle leaves, lemon zest, and lemon juice.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Transfer to a wire rack to cool completely.
  7. In a mixing bowl, beat the powdered sugar, unsalted butter, vanilla extract, and yellow food coloring (if using) until smooth and creamy. Spread the lemon buttercream evenly over the cooled cake.
  8. Slice and serve the nettle and lemon cake with lemon buttercream.
