Preheat the oven to 180°C (350°F). Grease and flour a cake pan.

In a large bowl, combine grated carrots, flour, brown sugar, vegetable oil, eggs, baking powder, ground cinnamon, and salt. Mix well.

Pour the batter into the prepared cake pan and smooth the top.

Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

In the meantime, prepare the cream cheese frosting. In a mixing bowl, beat cream cheese, unsalted butter, powdered sugar, and vanilla extract until smooth and creamy.

Once the cake is completely cooled, spread the cream cheese frosting evenly over the top and sides of the cake.

Sprinkle chopped walnuts on top for garnish.
