Boil the potatoes until tender. Drain and mash.

In a large bowl, combine the mashed potatoes, flour, diced onion, Dijon mustard, salt, and black pepper. Mix well to form a dough.

On a floured surface, roll out the dough to about 1/8-inch thickness. Use a round cookie cutter or a glass to cut out circles.

Place a spoonful of the potato filling in the center of each circle. Fold the dough over and seal the edges by pressing with a fork.

Bring a large pot of salted water to a boil. Cook the pierogies in batches for about 3-4 minutes, or until they float to the surface. Remove with a slotted spoon.

Heat vegetable oil in a skillet over medium heat. Fry the pierogies until golden brown on both sides.
