  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the chopped onion and minced garlic cloves to the skillet. Cook until the onion is translucent.
  4. Stir in the diced tomatoes, tomato sauce, chili powder, ground cumin, salt, and black pepper. Simmer for 10 minutes.
  5. Spread half of the Fritos corn chips in the bottom of a baking dish. Top with half of the meat mixture.
  6. Repeat the layers with the remaining Fritos corn chips and meat mixture.
  7. Sprinkle shredded cheddar cheese over the top.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  9. Let it rest for 5 minutes before serving.
  10. Garnish with sour cream and chopped green onions.
