Ingredients
  • 1 cup Farro
  • 200 gram Mushrooms
  • 1 small Onion
  • 2 clove Garlic
  • 1 cup Spinach
  • 2 large Eggs
  • 1 cup Milk
  • 1 cup Parmesan Cheese
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Cook farro according to package instructions. Set aside.
  2. Preheat oven to 350°F (180°C).
  3. In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
  4. Add mushrooms and cook until they release their moisture and become golden brown.
  5. Stir in spinach and cook until wilted.
  6. In a large bowl, whisk together eggs, milk, Parmesan cheese, salt, and black pepper.
  7. Add cooked farro and mushroom mixture to the bowl and mix well.
  8. Grease a pie dish and pour the mixture into it.
  9. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the center is set.
  10. Allow the pie to rest for 10 minutes before serving.
  11. Serve warm and enjoy!
