Mudslide Pie is inspired by the popular cocktail known as Mudslide, which combines vodka, coffee liqueur, and Irish cream.

  1. In a mixing bowl, combine the chocolate cookie crust and melted butter. Press the mixture into the bottom of a pie dish.
  2. In a microwave-safe bowl, melt the chocolate chips. Stir in the instant coffee granules, vanilla extract, Kahlua or coffee liqueur, and Baileys Irish Cream or milk.
  3. In a separate mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and continue to whip until stiff peaks form.
  4. Fold the chocolate mixture into the whipped cream until well combined.
  5. Pour the mixture into the prepared crust and smooth the top.
  6. Refrigerate for at least 4 hours or until set.
  7. Before serving, top with whipped cream and garnish with chocolate shavings.
