Peel and slice the potatoes. Boil them in salted water until tender.

Slice the eggplant and sprinkle with salt. Let it sit for 15 minutes to remove excess moisture.

Rinse the eggplant slices and pat them dry.

Heat olive oil in a frying pan and fry the eggplant slices until golden brown. Set aside.

In the same pan, add chopped onion and minced garlic. Sauté until translucent.

Add ground beef and cook until browned. Drain excess fat.

Stir in tomato paste, canned tomatoes, and red wine. Simmer for 10 minutes.

In a separate saucepan, heat milk and butter until the butter melts. Remove from heat and stir in grated Parmesan cheese, salt, black pepper, and nutmeg.

Mash the boiled potatoes and mix in the milk mixture.

In a baking dish, layer the eggplant slices, followed by the meat sauce, and finally the mashed potatoes.
