Pour the batter into the greased cake tin and smooth the top.

Bake for 40 minutes or until a toothpick inserted into the center comes out clean.

In the meantime, prepare the syrup by combining the honey, fresh mint leaves, and lemon juice in a saucepan. Heat over medium heat until the honey has melted and the mixture is well combined.

Once the cake is out of the oven, let it cool for 10 minutes, then remove it from the tin and place it on a serving plate.

Pour the hot syrup over the cake, allowing it to seep into the cake. Let the cake rest for 30 minutes before serving.
