Momma Moots’ Pork and Pierogies Casserole
Pierogies are a traditional Eastern European dish that can be filled with various ingredients such as potato, cheese, meat, or fruit.

Preheat the oven to 350°F (175°C).

Heat a large skillet over medium heat and add the pork shoulder. Cook until browned on all sides, then remove from the skillet and set aside.

In the same skillet, sauté the onion and garlic until softened.

Return the pork shoulder to the skillet and add the chicken broth. Bring to a boil, then reduce heat and simmer for 1 hour or until the pork is tender.

While the pork is cooking, cook the pierogies according to package instructions.

In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the sour cream and cook until thickened.

Remove the pork from the skillet and shred it using two forks.

In a large casserole dish, layer the shredded pork, cooked pierogies, and the sour cream mixture. Top with grated cheddar cheese.

Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.

Let the casserole rest for 10 minutes before serving.

Garnish with chopped parsley and season with salt and black pepper to taste.
