Molten chocolate cakes, also known as chocolate lava cakes, became popular in the 1980s and are loved for their gooey, molten chocolate center that oozes out when you cut into them.

Preheat the oven to 180°C (350°F) and grease four ramekins.

Melt the dark chocolate and butter together in a heatproof bowl over simmering water.

In a separate bowl, whisk together sugar, eggs, and vanilla extract until well combined.

Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously.

Sift in the all-purpose flour, instant coffee powder, and salt. Gently fold until just combined.

Divide the batter evenly among the prepared ramekins.

Bake for 10-12 minutes until the edges are set but the centers are still slightly jiggly.

Remove from the oven and let the cakes rest in the ramekins for 5 minutes.

Carefully invert each ramekin onto a serving plate and gently tap to release the cakes.
