Molten lava cakes, also known as chocolate lava cakes, became popular in the 1990s. The gooey, molten center is achieved by undercooking the cake batter, creating a delightful surprise when it is cut open.

Preheat the oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder.

In a microwave-safe bowl, melt the chocolate and butter together in 30-second intervals, stirring until smooth.

In a separate bowl, whisk together the eggs and sugar until well combined.

Gradually add the melted chocolate mixture to the egg mixture, whisking until smooth.

Sift in the flour and salt, and fold gently until just combined.

Divide the batter evenly among the prepared ramekins.

Bake for 12 minutes, or until the edges are set and the center is still slightly jiggly.

Remove from the oven and let the cakes rest in the ramekins for 5 minutes.

Carefully invert each ramekin onto a serving plate and gently remove the ramekin.

Serve immediately, garnished with powdered sugar, fresh berries, or a scoop of ice cream.
