  1. Preheat the oven to 200°C (400°F). Melt the chocolate and butter together in a heatproof bowl over simmering water. In a separate bowl, whisk the eggs and sugar until well combined. Gradually add the melted chocolate mixture to the egg mixture, stirring constantly. Sift in the flour and add the vanilla extract and salt. Mix until just combined. Grease and lightly flour individual ramekins. Pour the batter into the ramekins, filling them about 3/4 full. Bake for 10-12 minutes until the edges are set but the center is still slightly jiggly. Remove from the oven and let the cakes rest in the ramekins for 5 minutes. Carefully invert each ramekin onto a serving plate and gently tap to release the cake. Serve immediately with a dusting of powdered sugar, a scoop of ice cream, or fresh berries.
