The molten chocolate cake, also known as a lava cake, was invented by French chef Jean-Georges Vongerichten in the 1980s. It became popular for its rich, gooey chocolate center.

  1. Preheat the oven to 180°C (350°F) and grease a muffin tin.
  2. Melt the dark chocolate and butter together in a heatproof bowl set over a pan of simmering water.
  3. In a separate bowl, whisk together the granulated sugar and eggs until well combined.
  4. Gradually pour the melted chocolate mixture into the egg mixture, stirring constantly.
  5. Sift in the all-purpose flour and cocoa powder, and fold gently until just combined.
  6. Divide the batter evenly among the muffin tin cups.
  7. Place a cherry in the center of each cake and press it down slightly.
  8. Bake for 12-15 minutes, or until the edges are set but the centers are still slightly gooey.
  9. Allow the cakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
  10. Dust with powdered sugar before serving.
