  1. Preheat the oven to 350°F (175°C). In a large bowl, combine the mashed sweet potatoes, flour, brown sugar, baking powder, cinnamon, nutmeg, salt, eggs, milk, vegetable oil, and vanilla extract. Mix well. Grease a baking dish and pour the batter into it. Smooth the top with a spatula. Bake for 20 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let it rest for 10 minutes. Serve warm and enjoy!
