Shepherd’s Pie is traditionally made with lamb or mutton, while this mock-up version uses lentils as a vegetarian alternative.

  1. Peel and chop the potatoes. Boil them until tender, then drain and mash with butter and milk.
  2. In a large skillet, heat olive oil and sauté the onion and garlic until softened. Add carrots and cook for another 5 minutes.
  3. Add frozen peas, lentils, vegetable stock, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and black pepper to the skillet. Simmer for 15 minutes.
  4. Preheat the oven to 200°C (400°F).
  5. Transfer the lentil mixture to a baking dish and top with mashed potatoes.
  6. Bake for 20-25 minutes, until the top is golden brown.
  7. Let it rest for 10 minutes before serving.
