Mock Angel Food Cake is a lighter and less fussy version of the classic Angel Food Cake, but still delicious!

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch tube pan.
  2. In a large bowl, sift together the flour, granulated sugar, and salt.
  3. In another bowl, beat the egg whites with an electric mixer until foamy. Add the cream of tartar and continue beating until soft peaks form.
  4. Gradually add the sifted dry ingredients to the egg white mixture, folding gently until well combined.
  5. Stir in the vanilla extract and lemon juice.
  6. Pour the batter into the prepared tube pan and smooth the top.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and invert the pan onto a wire rack to cool completely.
  9. Once cooled, remove the cake from the pan and dust with powdered sugar.
  10. Serve and enjoy!
