  2. In a medium bowl, combine the chocolate cookie crust and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
  3. In a small bowl, dissolve the instant coffee granules in hot water. Set aside.
  4. In a microwave-safe bowl, heat the semi-sweet chocolate and 1/4 cup of heavy cream in 30-second intervals, stirring in between, until melted and smooth.
  5. In a large bowl, beat the cream cheese until smooth. Add the powdered sugar, vanilla extract, and dissolved coffee. Mix until well combined.
  6. Gradually add the melted chocolate mixture to the cream cheese mixture, beating until smooth.
  7. In a separate bowl, beat the remaining 3/4 cup of heavy cream until stiff peaks form. Fold the whipped cream into the chocolate mixture.
  8. Pour the filling into the prepared crust and smooth the top.
  9. Refrigerate for at least 4 hours, or until set.
