Instructions

  1. In a large bowl, mix together the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add the cold water, mixing until the dough comes together.
  2. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  3. In a separate bowl, combine the mixed berries, cornstarch, and lemon juice. Set aside.
  4. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  5. On a lightly floured surface, roll out one of the dough disks to a thickness of about 1/8 inch. Cut out circles using a round cookie cutter or a glass.
  6. Place a spoonful of the berry mixture in the center of each circle. Fold the dough over the filling and seal the edges by pressing with a fork.
  7. Transfer the hand pies to the prepared baking sheet. Brush the tops with the beaten egg and sprinkle with turbinado sugar.
  8. Bake for 20-25 minutes, or until the hand pies are golden brown.
  9. Allow to cool slightly before serving.
