In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

Gradually add cold water, 1 tablespoon at a time, until the dough comes together. Divide the dough into 6 equal portions and shape them into discs. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C).

In a separate bowl, toss the mixed berries with cornstarch and lemon juice until well coated.

Roll out each dough portion into a circle on a lightly floured surface. Spoon the berry mixture onto one half of each circle, leaving a border around the edges. Fold the other half of the dough over the berries and press the edges to seal.

Place the hand pies on a baking sheet lined with parchment paper. Brush the tops with beaten egg and sprinkle with turbinado sugar.
