Ingredients
  • 2 cup Mixed berries
  • 1 cup Almond meal
  • 1/2 cup Sugar
  • 1 tablespoon Cornstarch
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Vanilla extract
  • 1 sheet Pie crust
  • 1 beaten Egg
  • 2 tablespoon Sliced almonds
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the mixed berries, almond meal, sugar, cornstarch, lemon juice, and vanilla extract.
  3. Roll out the pie crust and cut it into circles.
  4. Spoon the berry mixture onto half of each circle.
  5. Fold the other half of the circle over the filling and press the edges to seal.
  6. Brush the pies with beaten egg and sprinkle sliced almonds on top.
  7. Bake for 20-25 minutes or until golden brown.
  8. Allow the hand pies to cool for 10 minutes before serving.
