Ingredients
  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 0.75 cup Granulated sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1 cup Mango puree
  • 2 tablespoon Dark rum
  • 0.5 cup Milk
  • 0.5 cup Powdered sugar
  • 1 teaspoon Lime zest
  • 1 tablespoon Lime juice
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a mini cake pan.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually mix in the mango puree and dark rum.
  5. Alternately add the dry ingredients and milk to the mango mixture, beginning and ending with the dry ingredients.
  6. Pour the batter into the prepared mini cake pan, filling each cavity about 2/3 full.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a cake comes out clean.
  8. Allow the cakes to cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.
  9. In a small bowl, whisk together the powdered sugar, lime zest, and lime juice to make the glaze.
  10. Drizzle the glaze over the cooled cakes and serve.
