  3. Add brown sugar, cinnamon, nutmeg, salt, and butter to the mashed sweet potatoes. Mix well.
  4. Roll out the pie crust and cut out circles using a round cookie cutter.
  5. Place a spoonful of the sweet potato mixture onto each circle.
  6. Fold the circles in half and seal the edges with a fork.
  7. Brush the pies with beaten egg.
  8. Bake for 20-25 minutes, or until golden brown.
  9. Allow the pies to cool for 10 minutes before serving.
