  4. Place the ramekins in a baking dish and fill the dish with enough hot water to reach halfway up the sides of the ramekins.
  5. Bake for 30 minutes or until the custard is set.
  6. Remove the ramekins from the water bath and let them cool to room temperature.
  7. Sprinkle each ramekin with turbinado sugar and use a kitchen torch to caramelize the sugar until golden and crispy.
  8. Let the brulees rest for 1 hour in the refrigerator before serving.
