  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter, melted
  • 1/2 cup Granulated sugar
  • 1/4 cup Packed light brown sugar
  • 3/4 cup Pumpkin puree
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1/4 cup Milk
  • For the streusel topping:
  • 1/4 cup All-purpose flour
  • 1/4 cup Granulated sugar
  • 1/4 cup Packed light brown sugar
  • 1/2 teaspoon Ground cinnamon
  • 2 tablespoon Unsalted butter, melted
Instructions
  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, mix together the melted butter, granulated sugar, brown sugar, pumpkin puree, egg, vanilla extract, and milk.
  4. Gradually add the wet ingredients to the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. In a small bowl, combine the streusel topping ingredients until crumbly.
  7. Sprinkle the streusel topping over the muffin batter.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
