Ingredients
  • 1.5 cup Pecans
  • 1 cup All-purpose flour
  • 0.5 cup Unsalted Butter
  • 1 cup Granulated Sugar
  • 2 Eggs
  • 0.5 cup Corn Syrup
  • 1 teaspoon Vanilla Extract
  • 0.25 teaspoon Salt
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Add the eggs and mix well.
  4. Press the mixture into the bottom and up the sides of greased mini tart pans.
  5. In a separate bowl, combine the sugar, corn syrup, eggs, vanilla extract, and salt. Mix well.
  6. Stir in the pecans.
  7. Spoon the pecan mixture into the prepared crusts.
  8. Bake for 20 minutes or until the filling is set.
  9. Allow the mini pecan pies to cool for at least 1 hour before serving.
